Icon is the new shape of functionality by Barazza. An innovative design idea for a collection of ovens that reaches as yet unexplored heights of refinement and elegance. The ergonomics of the elements means that they can cover a wide variety of needs, ranging from 60 cm ovens, to combi-steam and combi-microwave ovens and blast chillers with the option to add a coffee machine and vacuum sealer or warming drawer.

The Icon oven collection expands with new sizes and features. Icon introduces the new Icon XL 90×60 cm oven with an exclusive 120‑litre capacity that gives room to the most ambitious culinary projects; the 75 cm Icon X oven, with coordinated microwave, particularly capacious and in line with interior design trends; and the Icon One oven with digital programmer, which reaches 270 °C.

ICON GLASS

A new icon of style and functionality in the kitchen. The Icon collection, with its multitude of pieces of equipment and wide choice of finishes, encases technology in functionality and beauty, all very visible. The convenient central knobs and the handle on the front, in the distinctive Soft-Touch cladding, are the heart and soul of Icon and the central theme that covers the whole range: from the 60 cm oven to the combi-microwave oven, from the combi-steam oven to the blast chiller, and from the coffee machine to the vacuum sealer and warming drawers. The Soft-Close hinges ensure perfect silent closure of the doors of the ovens and coordinated products, making them even more practical to use. The Icon Glass line stands out for the sophisticated effect of the black glass finish which imbues the elements with a refined, very versatile style.

Stainless steel’s most unusual cladding is painted black for an effect that is absolutely Exclusive. The fully matt surface allows no reflection of the light: the design stands out, displaying the perfection of its lines. A linearity that converges in the central knobs and the handle on the front, with their distinctive Soft-Touch cladding, which accompany the elements of the Icon Exclusive range in all its versions: from the 60 cm oven to the combi-microwave oven, from the combi-steam oven to the blast chiller and from the coffee machine to the vacuum sealer and warming drawers. 60 CM OVEN WITH ZEFIRO SYSTEM

Zefiro is the first system in the world that can transform the built-in oven into an actual air sanitizer; a unique and exclusive bonus that enhances the already rich range of functions and equipment in the Icon 60 ovens.

1. Using the tangential ventilation of the appliance, the air to be purified is sucked through a series of holes specially placed on the rear side of the oven.
2. Once inside, the air is conveyed to the upper side and channeled through a double beam of germicidal ultraviolet light, emitted by two UV-C LED plates; the germicidal ultraviolet light modifies the DNA or RNA of the microorganisms it irradiates, preventing them from reproducing or being harmful to humans.
3. Purified from harmful substances and bad smells, the air is reintroduced into the environment through the slot located on the front of the oven, between the door and the front controls.

BENEFITS OF THE ZEFIRO SYSTEM


Zefiro turns the oven into a true air sanitiser, improving indoor air quality with a complete set of functions:

• Purifies air from viruses and bacteria, sanitising rooms and making them safer.
• Helps remove unpleasant odours from the kitchen and can operate at the same time as the hood, speeding up the process
• Since it only uses the tangential ventilation and automatically turns off the oven’s internal light while sanitising, energy consumption is so low that frequent, prolonged use is possible.

FEEL GOOD SYSTEM

Feel Good is the innovative, healthy cooking and food‑preservation system composed of the vacuum drawer and the combined steam oven from the Icon collection. With the vacuum drawer you can keep food in the fridge or freezer for longer and then cook or regenerate it directly in the steam oven.

PREPARATION AND CONSUMPTION:
1. Prepare the food and place it in the bag.
2. Place the bag in the vacuum drawer; extract the air and seal it hermetically.
3. Place it in the steam oven and cook the food (you can cook several foods at the same time because the bags prevent flavours from mixing).
4. Once cooking is complete, remove the food from the bag and serve.
PREPARATION AND PRESERVATION:
1. Prepare the food and place it in the bag.
2. Place the bag in the vacuum drawer; extract the air and seal it hermetically.
3. If the food is frozen and stored in the freezer, it should first be regenerated in the steam oven before cooking.

FOOD LASTS UP TO 5 TIMES LONGER
When correctly vacuum‑packed and stored in the fridge or freezer, raw or cooked food lasts significantly longer than with traditional storage methods.

FLAVOURS, TEXTURES AND PROPERTIES REMAIN UNCHANGED
Cooking in a steam oven preserves both the vitamin content and the organoleptic properties of previously vacuum‑packed food. Regenerating in the steam oven prevents quality loss during thawing.

SAVES TIME, COSTS AND WASTE
Different foods stored under vacuum can be cooked or regenerated together in the steam oven without flavours mixing; in a single oven cycle you can cook a complete menu, from starter to dessert. Leftovers can be vacuum‑sealed again and stored, significantly reducing waste.

BETTER HYGIENE AND EASY CLEANING
Thanks to the hermetic closure of vacuum bags—which prevents any liquid spilling during preparation—you are guaranteed optimal hygiene and a considerable reduction in cleaning time.

COMBI-STEAM OVEN

The compact combi-steam oven offers both traditional hot air and steam cooking functions. Steaming food is a quick and healthy cooking method that doesn’t require additional oils and condiments. It preserves the food’s vitamin, protein and mineral contents as well as its organoleptic features, taste, appearance and consistency.

COMBI-MICROWAVE OVEN

The compact combi-microwave oven offers traditional convection and microwave cooking. The combi function allows you to combine the two cooking methods to cook lasagne, flans, chicken and roast potatoes in no time at all.

Compact combined microwave ovens add the advantages of microwaves to the traditional functions of convection ovens. Combining these two technologies achieves results never experienced before in terms of both the quality and taste of food and the speed of cooking.

COFFEE MACHINE

The Icon coffee machine let you make espresso coffee, cappuccino and other hot drinks just like you would find in a café.

VACUUM SEALER DRAWER

Vacuum sealing provides two specific results: foods are preserved for long periods of time and we can avoid waste. Food is preserved in two types of bags, those used to simply store the food and those which are also suitable for steam cooking or bain-marie. The cooking bags withstand different cooking temperatures depending on the type of food and cooking time required, for taste and quality like you have never experienced before.

BENEFITS OF THE VACUUM DRAWER


The Barazza vacuum drawer offers three different vacuum levels, allowing you to choose between bag or container preservation (container available separately):

• minimum: for packaging delicate products sensitive to pressure such as strawberries, berries, salads, and items prone to loss of volume like mousses, whipped cream and fresh cheeses;
• medium: for preserving raw or cooked products sensitive to pressure such as fish fillets, whole shellfish, tomatoes, sauces or soups;
• maximum: for preserving raw or cooked products that are not delicate such as potatoes, carrots, meat, mature cheeses or products immersed in liquid like vegetables in oil. At maximum power the drawer removes over 99% of air, a value comparable to professional equipment.

It can also perform sealing only on plastic bags for delicate products, with three selectable sealing levels:

• Level 1: thin bags, including non‑vacuum bags;
• Level 2: vacuum bags for storage;
• Level 3: vacuum bags for cooking and storage.

CHEF FUNCTION:
The appliance features the exclusive Chef mode which, by exploiting the vacuum created inside the chamber, can perform various functions such as meat massaging, cold infusions, extraction of essential oils and marinating. Working under vacuum—without air and pressure—accelerates these processes exponentially; for example, vacuum marinating can achieve in about ten minutes the same liquid penetration you would obtain with 48 hours of traditional marinating.

WARMING DRAWER
